For example, if you wish to change from Server 2016 Evaluation Standard to Server 2016 Standard, use the following
Dism /online /Set-Edition:ServerStandard /AcceptEula /ProductKey:WC2BQ-8NRM3-FDDYY-2BFGV-KHKQY
For Datacenter Edition of Server 2019
Dism /online /Set-Edition:ServerDatacenter /AcceptEula /ProductKey:WMDGN-G9PQG-XVVXX-R3X43-63DFG
Replace the key with the edition you wish to change to.
